  • 3 lbs Pork shoulder roast
  • 1 lb Dried pinto beans
  • 1 large Onion, diced

  • 1 tsp Ground coriander
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 5 cups Chicken broth
  • 2 leaves Bay leaves
  • 12 pieces Corn tortillas or flour tortillas
  • 1 assorted Toppings (lettuce, tomatoes, shredded cheese, sour cream, etc.)

Directions

Step 1

Rinse the dried pinto beans under cold water and set aside. No need to soak the beans beforehand.

Step 2

Trim any excess fat from the pork shoulder roast and place it in the crock pot.

Step 3

Add the pinto beans, diced onion, minced garlic, and diced green chilies to the crock pot.

Step 4

In a small bowl, mix together the cumin, chili powder, oregano, ground coriander, salt, and black pepper. Sprinkle this spice mixture evenly over the contents of the crock pot.
