Ingredients

  • 2 lb Pork shoulder (cut into 2-inch chunks)
  • 0.5 cup Soy sauce
  • 0.25 cup Hoisin sauce
  • 2 tbsp Honey
  • 2 tbsp Rice vinegar
  • 4 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)
  • 2 tbsp Cornstarch
  • 2 tbsp Water
  • 0.75 cup Cashews (unsalted and roasted)
  • 3 stalks Green onions (sliced thinly for garnish)
  • 1 tbsp Sesame seeds (optional, for garnish)
  • 4 cups Cooked rice or noodles (for serving)

Directions

Step 1

Trim any excess fat from the pork shoulder, then cut it into 2-inch chunks.

Step 2

In a medium bowl, whisk together soy sauce, hoisin sauce, honey, rice vinegar, minced garlic, and grated ginger to create the sauce.

Step 3

Place the pork chunks into your slow cooker and pour the prepared sauce over the top, ensuring all pieces are coated evenly.

Step 4

Cover the slow cooker with the lid and cook the pork on LOW for 6-8 hours or on HIGH for 4-5 hours, until the pork is tender and easily pulls apart with a fork.

Step 5

Once the pork is cooked, remove it from the slow cooker with a slotted spoon and transfer it to a plate. Shred the pork slightly with two forks if desired.

Step 6

In a small bowl, mix the cornstarch with water to create a slurry. Stir this mixture into the sauce in the slow cooker to thicken it.

Step 7

Return the pork to the slow cooker, mix it with the thickened sauce, and cook on HIGH for an additional 15-20 minutes to coat the pork evenly.

Step 8

Stir in the roasted cashews until well combined.

Step 9

Serve the Crock Pot Cashew Pork over cooked rice or noodles. Garnish with sliced green onions and sesame seeds (if using).
