Ingredients

  • 2 pounds Boneless, skinless chicken thighs
  • 0.25 cup Cornstarch
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 0.25 cup Low-sodium soy sauce
  • 2 tablespoons Rice vinegar
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Honey
  • 1 tablespoon Brown sugar
  • 3 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 0.25 teaspoon Red pepper flakes
  • 0.75 cup Cashews, unsalted
  • 2 pieces Green onions, sliced
  • 4 cups Cooked white or brown rice

Directions

Step 1

Cut the chicken thighs into bite-sized pieces, about 1-inch cubes.

Step 2

In a large bowl, toss the chicken with cornstarch and black pepper to coat evenly.

Step 3

Heat the vegetable oil in a large skillet over medium-high heat. Sear the chicken in batches until lightly browned on all sides (it does not need to be fully cooked at this stage). Transfer the browned chicken to the Crock Pot.
