Ingredients

  • 3 lbs Pork shoulder (trimmed and cut into 2-inch cubes)
  • 10 units Dried New Mexico or Guajillo chiles
  • 3 cups Hot water
  • 6 units Garlic cloves (peeled and minced)
  • 1 medium White onion (diced)
  • 2 tsp Ground cumin
  • 2 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 1.5 tsp Salt
  • 2 tbsp Apple cider vinegar
  • 1 cup Chicken broth (low sodium)
  • 1 tbsp Vegetable oil

Directions

Step 1

Heat a dry skillet over medium heat. Toast the dried chiles in batches for 30-60 seconds on each side until fragrant, being careful not to burn them.

Step 2

Transfer the toasted chiles to a large bowl and pour 3 cups of hot water over them. Let them soak for 20 minutes until softened.

Step 3

In a blender, combine the soaked chiles (reserve the soaking liquid), minced garlic, diced onion, cumin, oregano, smoked paprika, salt, apple cider vinegar, and 1 cup of the chile soaking liquid. Blend until smooth.
