  • 3 pounds Beef chuck roast
  • 1 tablespoon Caraway seeds

  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves (minced)
  • 2 cups Beef broth
  • 1 large Yellow onion (sliced)
  • 4 medium Carrots (peeled and chopped)
  • 3 stalks Celery stalks (chopped)
  • 1.5 pounds Baby potatoes
  • 2 leaves Bay leaves

Directions

Step 1

Season the beef chuck roast on all sides with salt, black pepper, and caraway seeds. Gently rub the seasonings into the meat.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the beef for 3-4 minutes on each side until browned. This step locks in flavor.

Transfer the seared beef to the bottom of a crock pot (slow cooker).
