  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 3 medium carrots, chopped
  • 3 medium russet potatoes, peeled and chopped
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Season the beef chuck roast generously with Cajun seasoning on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.
