  • 3 cloves Garlic, minced
  • 1 can (14 ounces) Diced tomatoes (canned, with juices)
  • 1 cup Chicken broth
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Parsley (optional, for garnish)
  • 4 cups Cooked white rice (optional, for serving)

Directions

Step 1

In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with 1 tablespoon of Cajun seasoning, salt, and black pepper, then sear for 2-3 minutes per side until lightly browned. Remove and set aside.

In the same skillet, briefly sear the sliced smoked sausage for 1-2 minutes, then set aside.
