Ingredients

  • 20 ounces frozen hash browns
  • 1 pound breakfast sausage
  • 12 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 spray cooking spray

Directions

Step 1

Spray the inside of a Crock Pot with cooking spray to prevent sticking.

Step 2

In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess grease and set aside.

Step 3

Layer half of the frozen hash browns at the bottom of the Crock Pot.

Step 4

Add half of the cooked sausage, half of the diced bell pepper, half of the diced onion, and 1 cup of shredded cheddar cheese on top of the hash browns.

Step 5

Repeat the layers with the remaining hash browns, sausage, bell pepper, onion, and cheddar cheese.

Step 6

In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.

Pour the egg mixture evenly over the layers in the Crock Pot.

Cover the Crock Pot with the lid and cook on LOW heat for 8 hours (overnight) or HIGH heat for 4 hours until the eggs are fully set and the casserole is cooked through.
