  • 1 cup Dried black-eyed peas
  • 2 cups Okra, sliced

  • 4 cups Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Dried thyme
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Sort and rinse the dried black-eyed peas to remove any debris, then place them in a bowl and cover with several inches of water. Let them soak overnight, or for at least 8 hours. Drain and rinse before using.
