  • 1 lb Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 14.5 oz can Diced tomatoes with green chilies (Rotel)
  • 1 15 oz can Black beans, drained and rinsed
  • 1 cup Frozen corn kernels
  • 2 tbsp Tomato paste
  • 1 packet Taco seasoning
  • 1 8.5 oz box Cornbread mix
  • 0.333 cup Milk
  • 1 Egg
  • 1 cup Shredded cheddar cheese
  • 2 tbsp Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the ground beef and diced onion to the skillet and cook until the beef is browned and the onion is softened, about 5-7 minutes. Add the minced garlic and cook for another 1 minute. Drain any excess grease.

Step 2

Transfer the cooked beef mixture to the crock pot. Add the diced tomatoes with green chilies, drained black beans, frozen corn, tomato paste, and taco seasoning. Stir well to combine.
