Ingredients

  • 1.5 pounds beef stew meat
  • 4 medium carrots, peeled and sliced
  • 4 medium red potatoes, diced
  • 3 celery stalks, chopped
  • 1 large yellow onion, diced
  • 14.5 ounces canned diced tomatoes (with juice)
  • 6 cups beef broth
  • 3 cloves minced garlic
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 cup frozen peas
  • 0.25 cup parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Season the beef stew meat with a pinch of salt and pepper, then sear the meat in the skillet for 2-3 minutes on each side until browned. This locks in the flavor. Work in batches if necessary.

Step 3

Transfer the browned beef to the crock pot.

Step 4

Add the carrots, red potatoes, celery, diced onion, and minced garlic to the crock pot.

Step 5

Pour the canned diced tomatoes (including juice) and beef broth over the vegetables and beef.

Step 6

Stir in the bay leaves, dried thyme, salt, and black pepper.

Step 7

Cover the crock pot with its lid and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until the beef is tender and the vegetables are cooked through.

Step 8

About 30 minutes before serving, stir in the frozen peas and allow them to heat through.

Step 9

Taste the soup and adjust the seasoning with additional salt or pepper if necessary.

Step 10

Remove the bay leaves before serving.

Step 11

Serve hot, garnished with fresh chopped parsley if desired, alongside crusty bread or crackers.
