  • 2 tablespoons fresh parsley
  • 1 teaspoon fresh thyme leaves (optional)

Directions

Step 1

Pat the beef round roast dry with paper towels and season generously with salt and black pepper on all sides.

Heat a large skillet over medium-high heat and add olive oil. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Transfer the seared roast to the crock pot.
