  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil

  • 1 teaspoon black pepper
  • 1 large, diced onion
  • 4 minced garlic cloves
  • 1 cup beef broth
  • 3 tablespoons tomato paste
  • 1 14.5-ounce can diced tomatoes
  • 0.5 cup Madeira wine
  • 1 whole bay leaf
  • 1 teaspoon dried thyme
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Pat the beef chuck roast dry with paper towels and season evenly with 1 teaspoon of salt and 1 teaspoon of black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Transfer the beef to the crock pot.
