  • 14.5 ounces Diced tomatoes (canned, undrained)
  • 6 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Add the beef stew meat and brown it on all sides, about 5-7 minutes. Transfer the browned meat to the crock pot.

Step 2

Rinse the lentils under cold water and pick through them to remove any debris. Add the lentils to the crock pot.

Add the diced carrots, celery, and onion to the crock pot, followed by the minced garlic.
