Ingredients

  • 1 pound beef stew meat, cubed
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and diced
  • 1 medium red bell pepper, diced
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 tablespoons tomato paste
  • 14.5 ounces diced tomatoes, canned with juices
  • 4 cups beef broth
  • 1 bay leaf
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a skillet over medium-high heat. Add the beef stew meat and sear on all sides until browned, about 4-5 minutes. Transfer the beef to the crock pot.

Step 2

In the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until fragrant. Add this mixture to the crock pot.

Step 3

Add the carrots, potatoes, red bell pepper, and canned diced tomatoes (with their juices) to the crock pot.

Step 4

Sprinkle the paprika, ground cumin, dried oregano, salt, and black pepper over the mixture in the crock pot.

Step 5

Stir in the tomato paste, ensuring it coats the ingredients evenly.

Step 6

Pour the beef broth into the crock pot and add the bay leaf. Stir to combine everything.

Step 7

Cover the crock pot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the vegetables are cooked through.

Step 8

Remove the bay leaf before serving.

Step 9

Ladle the soup into bowls and garnish with fresh chopped parsley.
