Ingredients

  • 2 pounds Ground beef
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 15 ounces Black beans, drained and rinsed
  • 15 ounces Kidney beans, drained and rinsed
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 1 cup Crème fraîche
  • 1 teaspoon Hot sauce
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 2 tablespoons Green onions, sliced (optional for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 6-7 minutes. Drain excess grease if needed.

Step 2

Transfer the browned beef to a crock pot.

Step 3

In the same skillet, sauté the diced onion until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute. Transfer the onion and garlic mixture to the crock pot.

Step 4

Add the diced tomatoes, tomato paste, black beans, kidney beans, beef broth, chili powder, ground cumin, paprika, oregano, salt, black pepper, and red pepper flakes (if using) to the crock pot. Stir well to combine.

Step 5

Cover the crock pot with a lid and cook on low for 8 hours or on high for 4 hours, stirring occasionally if possible.

Step 6

To make the chili crème fraîche, combine the crème fraîche and hot sauce in a small bowl. Mix well and set aside in the refrigerator until ready to serve.

Step 7

Once the chili finishes cooking, taste and adjust seasonings as needed (e.g., salt, pepper, or additional spices).

Step 8

Serve the chili hot, topped with a dollop of the chili crème fraîche. Garnish with chopped fresh cilantro and sliced green onions if desired.
