Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 medium carrot, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 14.5 ounces canned diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups uncooked elbow macaroni
  • 1 cup shredded cheddar cheese

Directions

Step 1

In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and transfer the beef to the crock pot.

Step 2

Add the diced onion, carrot, and celery to the crock pot along with the minced garlic.

Step 3

Pour the canned diced tomatoes and beef broth over the mixture in the crock pot.

Step 4

Stir in the tomato paste, Worcestershire sauce, dried oregano, dried thyme, salt, and black pepper. Mix well to combine.

Step 5

Cover the crock pot with the lid and cook on low for 4 hours, or until the vegetables are tender and flavors are well combined.

Step 6

About 20 minutes before the cooking time is complete, add the uncooked elbow macaroni to the crock pot. Stir well and cover again to cook until the pasta is tender.

Step 7

Sprinkle shredded cheddar cheese over the casserole, re-cover, and cook for an additional 5 minutes, or until the cheese is melted.
