  • 3 large carrots, peeled and sliced into rounds
  • 3 cloves garlic cloves, minced
  • 2 cups red wine (preferably Burgundy or Pinot Noir)
  • 1.5 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme, fresh or dried
  • 1 leaf bay leaf
  • 8 ounces mushrooms, quartered
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Season the beef chuck roast with salt, pepper, and sprinkle it lightly with the flour to coat.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the beef for 2-3 minutes per side until deeply browned. Transfer to the crock pot.

Step 3

In the same skillet, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside. Leave about 1 tablespoon of the bacon grease in the skillet.
