Ingredients

  • 1 pound Beef stew meat, cubed
  • 6 slices Bacon, chopped
  • 1 medium Onion, diced
  • 3 medium Carrots, sliced
  • 2 stalks Celery, sliced
  • 3 cloves Garlic, minced
  • 0.75 cup Pearl barley
  • 6 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Heat olive oil in a skillet over medium heat. Add the beef stew meat and sear on all sides until browned. Transfer the beef to your Crock Pot.

Step 2

In the same skillet, cook the chopped bacon until crispy. Remove with a slotted spoon and add to the Crock Pot, leaving the bacon drippings in the skillet.

Step 3

Add the diced onion, carrots, celery, and minced garlic to the skillet. Sauté for 5 minutes until softened and aromatic, then transfer the vegetables to the Crock Pot.

Step 4

Add pearl barley, beef broth, tomato paste, dried thyme, dried parsley, salt, and black pepper to the Crock Pot. Stir everything together to combine.
