Ingredients

  • 2 cups Dried mixed beans (such as pinto, kidney, navy, black beans)

  • 14.5 oz Canned diced tomatoes
  • 2 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.75 cup Cornmeal
  • 0.5 cup All-purpose flour
  • 1 tsp Baking powder
  • 0.25 tsp Salt (for dumplings)
  • 0.5 cup Milk
  • 2 tbsp Butter, melted

Directions

Step 1

Rinse and sort the dried beans, removing any debris or broken beans.

Step 2

Place the beans in a large bowl and cover with water. Let them soak overnight or for at least 8 hours. Drain and rinse before using.

In a 6-quart crock pot, combine the soaked beans, water, vegetable broth, diced carrots, celery, onion, minced garlic, canned diced tomatoes (with their liquid), smoked paprika, ground cumin, dried oregano, salt, and black pepper.

Stir the ingredients well, cover the crock pot, and set it to cook on low for 8 hours or until the beans are tender.
