Ingredients

  • 2 pounds Boneless, skinless chicken breasts
  • 2 cups BBQ sauce
  • 3 medium Bell peppers (any color, sliced)
  • 1 medium Onion (sliced)
  • 2 cloves Garlic (minced)
  • 0.5 cups Chicken broth
  • 1 teaspoons Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Heat olive oil in a skillet over medium heat. Add the sliced onion and garlic, cooking until softened and aromatic, about 3-5 minutes.

Step 2

Layer the sliced bell peppers in the bottom of the crock pot. Spread the cooked onion and garlic over the peppers.

Step 3

Place the chicken breasts on top of the vegetables in the crock pot.

Step 4

In a small bowl, combine the BBQ sauce, chicken broth, smoked paprika, salt, and black pepper. Mix until smooth.

Step 5

Pour the BBQ sauce mixture over the chicken breasts, making sure they are evenly coated.

Step 6

Cover the crock pot with its lid and cook on low heat for 6-7 hours or on high heat for 3-4 hours, until the chicken is fully cooked and tender.

Step 7

Using two forks, shred the chicken directly in the crock pot, mixing well to coat the shredded pieces in the BBQ sauce and juices.

Step 8

Serve the BBQ chicken and peppers hot over rice, in sandwich buns, or on a baked potato. Enjoy!
