Ingredients

  • 1 lb Ground beef
  • 1 medium, diced Sweet onion
  • 1 medium, diced Green bell pepper
  • 3 minced Garlic cloves
  • 28 oz Crushed tomatoes
  • 15 oz (drained and rinsed) Kidney beans
  • 15 oz (drained and rinsed) Black beans
  • 1 cup Beef broth
  • 1 cup Barbecue sauce
  • 2 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp (optional) Red pepper flakes
  • 1 cup (for garnish) Shredded cheddar cheese
  • 0.5 cup (for garnish) Sour cream
  • 0.25 cup (for garnish) Chopped green onions

Directions

Step 1

Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up into crumbles as it cooks, about 5-7 minutes. Drain and discard any excess grease.

Step 2

Transfer the browned ground beef to the crock pot.

Step 3

In the same skillet, sauté the diced onion and green bell pepper until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute. Transfer this mixture to the crock pot.

Step 4

Add the crushed tomatoes, kidney beans, black beans, beef broth, and barbecue sauce to the crock pot.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, salt, black pepper, and red pepper flakes (if using). Mix everything together well.

Step 6

Cover the crock pot with its lid and set to cook on LOW for 6-8 hours or on HIGH for 3-4 hours.

Step 7

Stir the chili occasionally if you're home, to ensure even cooking and flavor distribution.

Step 8

Once cooked, taste and adjust seasoning if needed (adding more salt or black pepper, to taste).

Step 9

Serve hot in bowls with optional garnishes like shredded cheddar cheese, sour cream, and chopped green onions.
