Ingredients

  • 3 pounds Beef chuck roast
  • 1 large Onion
  • 3 Garlic cloves
  • 2 cups Barbecue sauce
  • 1 cup Beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Brown sugar
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Oil (for searing)

Directions

Step 1

Season the beef chuck roast on all sides with salt and black pepper.

Step 2

In a large skillet, heat the oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side. Transfer the beef to the Crock Pot.

Step 3

Thinly slice the onion and mince the garlic. Layer the sliced onion on top of the beef in the Crock Pot, then add the minced garlic.

Step 4

In a medium bowl, combine barbecue sauce, beef broth, Worcestershire sauce, brown sugar, smoked paprika, and apple cider vinegar. Stir well to combine.

Step 5

Pour the sauce mixture over the beef and onions in the Crock Pot, ensuring the beef is mostly submerged in the liquid.

Step 6

Cover the Crock Pot and cook on low for 8 hours or on high for 4-5 hours, until the beef is fork-tender and easily shreddable.

Step 7

Once cooked, remove the beef from the Crock Pot and use two forks to shred it into smaller pieces.

Step 8

Return the shredded beef to the Crock Pot, stirring it into the sauce to coat well. Allow it to cook on low for an additional 20-30 minutes to absorb the flavors.

Step 9

Serve the barbecue beef warm on buns, over rice, or alongside your favorite sides. Enjoy!
