Ingredients

  • 3 pounds Beef chuck roast
  • 1.5 teaspoons Sea salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Dried thyme
  • 2 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 cup Beef broth
  • 1 cup Balsamic vinegar
  • 4 Carrots, peeled and cut into chunks
  • 1 Yellow onion, sliced
  • 2 sprigs Fresh rosemary sprigs

Directions

Step 1

Season the beef chuck roast evenly on all sides with sea salt, black pepper, garlic powder, onion powder, and dried thyme.

Step 2

In a large skillet, heat olive oil over medium-high heat. Once hot, sear the roast on all sides until browned, about 3-4 minutes per side. This step adds depth of flavor.

Transfer the seared roast to the crock pot.

Add minced garlic, beef broth, and balsamic vinegar to the crock pot. Pour these liquids around the roast, not directly on top to preserve the seasoning.
