Rinse and sort the dried navy beans to remove any debris. Place them in a large bowl, cover with water, and soak overnight (at least 8 hours).
Drain and rinse the soaked beans, then transfer them to a pot. Cover with fresh water by about 2 inches, bring to a boil, and simmer for 30 minutes. Drain the beans and set aside.
In a large skillet, cook the diced bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set it aside, leaving the bacon fat in the skillet.
Add the diced onion to the skillet and sauté in the bacon fat until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute. Remove from heat.
