Ingredients

  • 4 cups canned navy beans (drained and rinsed)
  • 6 slices thick-cut bacon
  • 1 medium yellow onion (diced)
  • 1 cup ketchup
  • 0.5 cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup water

Directions

Step 1

Cook the bacon in a skillet over medium heat until crispy. Remove the bacon and let it cool before crumbling into bite-sized pieces. Set aside.

Step 2

In the same skillet, cook the diced onion in the bacon drippings over medium heat until soft and translucent, about 5 minutes. Remove from heat.

Step 3

In the insert of your crock pot, combine the navy beans, cooked onions, ketchup, brown sugar, molasses, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper.

Step 4

Stir in the crumbled bacon and water until all ingredients are evenly mixed.

Step 5

Set the crock pot to low heat and cook for 5 hours (or on high heat for 3 hours), stirring occasionally to ensure even cooking.

Step 6

After cooking, taste and adjust seasoning if desired.

Step 7

Serve warm as a side dish or enjoy on its own with bread or cornbread.
