Ingredients

  • 1 pound Dried navy beans
  • 6 slices Bacon, diced
  • 1 Small onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Ketchup
  • 0.5 cup Brown sugar, packed
  • 0.33 cup Molasses
  • 1 tablespoon Yellow mustard
  • 1 tablespoon Apple cider vinegar
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Salt
  • 4 cups Water

Directions

Step 1

Rinse the dried navy beans thoroughly under cold water and pick out any debris. Place the beans in a large bowl, cover with water, and soak them overnight (8-12 hours).

Step 2

Drain and rinse the soaked beans. Add them to the crock pot.

Step 3

In a large skillet over medium heat, cook the diced bacon until it is crispy. Use a slotted spoon to transfer the bacon to the crock pot, leaving the bacon grease in the skillet.

Step 4

In the same skillet, sauté the chopped onion until translucent, about 4-5 minutes. Add the minced garlic and cook for an additional minute. Transfer the mixture to the crock pot.

Step 5

In a medium bowl, whisk together the ketchup, brown sugar, molasses, mustard, apple cider vinegar, black pepper, and salt. Add the water and whisk until combined.

Step 6

Pour the sauce mixture over the beans, bacon, and onion in the crock pot. Stir gently to combine.

Step 7

Cover the crock pot with the lid and cook on low heat for 8-10 hours, or until the beans are tender and the sauce has thickened.

Step 8

Stir the baked beans occasionally during cooking if possible, and taste to adjust seasoning if necessary.

Step 9

Serve the baked beans warm as a side dish to your favorite barbecue dishes, burgers, or sandwiches. Enjoy!
