Ingredients

  • 3 pounds corned beef brisket with seasoning packet
  • 3 medium apples (such as Fuji or Honeycrisp), sliced
  • 0.5 cups brown sugar
  • 2 cups unsweetened apple juice
  • 1 yellow onion, sliced
  • 6 whole cloves
  • 2 bay leaves
  • 1 pound baby carrots
  • 1.5 pounds red potatoes, halved
  • 1 head cabbage, cut into wedges

Directions

Step 1

Rinse the corned beef brisket under cold water to remove excess brine. Pat dry with paper towels.

Step 2

Place the corned beef brisket in the crock pot, fat side up.

Step 3

Sprinkle the seasoning packet that comes with the brisket evenly over the meat.

Step 4

Top the brisket with the sliced apples and onion.

Step 5

Sprinkle the brown sugar over the apples and onion.

Step 6

Pour the unsweetened apple juice around the brisket, ensuring it does not wash the seasoning off the meat.

Add the whole cloves and bay leaves to the liquid in the crock pot.
