Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.25 cups Amaretto liqueur
  • 0.5 cups Chicken broth
  • 2 tablespoons Soy sauce
  • 3 tablespoons Honey
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)
  • 4 servings Cooked rice or noodles (optional, for serving)

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Place the chicken breasts in the bottom of a crock pot (slow cooker).

Step 3

In a mixing bowl, combine the amaretto liqueur, chicken broth, soy sauce, honey, and minced garlic. Stir until well blended.

Step 4

Pour the amaretto mixture over the chicken breasts in the crock pot, ensuring the chicken is fully coated in the liquid.

Step 5

Cover the crock pot with a lid and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, or until the chicken is fully cooked and tender.

Step 6

Once the chicken is cooked, remove the chicken breasts from the crock pot and set them aside on a plate. Cover them loosely with foil to keep warm.

Step 7

In a small bowl, mix the cornstarch and cold water to create a slurry.

Step 8

Add the cornstarch slurry to the liquid in the crock pot and stir well. Turn the crock pot to HIGH and let the sauce cook for 10-15 minutes, stirring occasionally, until it thickens.

Step 9

Return the chicken breasts to the crock pot and spoon the thickened sauce over them to coat.

Step 10

Serve the chicken warm, garnished with fresh parsley if desired, alongside cooked rice or noodles for a complete meal.
