Ingredients

  • 2 pounds Ground beef
  • 1 cup Breadcrumbs
  • 0.5 cup Milk
  • 0.5 cup Ketchup
  • 2 large Eggs
  • 0.5 cup Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dry mustard
  • 2 tablespoons Brown sugar
  • 0.25 cup Additional ketchup (for topping)
  • 1 sheet Aluminum foil (for forming a loaf-shape insert)

Directions

Step 1

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, ketchup, eggs, onion, garlic, Worcestershire sauce, salt, pepper, and dry mustard.

Step 2

Using your hands, mix the ingredients until evenly combined, but do not over-mix as this can make the meatloaf dense.

Step 3

Cut a sheet of aluminum foil large enough to fit the base of your crock pot and shape it into a loaf pan-sized tray. This will keep the meatloaf from sitting directly in its juices while cooking and make it easier to remove.

Step 4

Spray the foil insert lightly with non-stick cooking spray and place it at the bottom of the crock pot.

Step 5

Form the meat mixture into a loaf shape and place it on the foil in the crock pot.

Step 6

In a small bowl, mix the brown sugar with the additional 1/4 cup of ketchup to create the glaze. Evenly spread this mixture over the top of the meatloaf.

Step 7

Cover and cook on low for 4 hours, or until the internal temperature of the meatloaf reaches 160°F (71°C).

Step 8

Once cooked, carefully lift the foil insert out of the crock pot and set the meatloaf on a cutting board. Let it rest for 5-10 minutes before slicing.

Step 9

Serve warm with your favorite sides, such as mashed potatoes or green beans, and enjoy!
