  • 500 grams lamb shoulder or leg, cubed
  • 500 grams beef chuck, cubed
  • 3 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 3 units garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 units celery stalks, diced
  • 2 tablespoons tomato paste
  • 400 grams diced tomatoes (canned)
  • 750 milliliters beef or vegetable stock
  • 125 milliliters dry white wine (optional)
  • 2 teaspoons paprika
  • 1 unit bay leaf
  • 250 grams green peas (fresh or frozen)
  • 2 tablespoons fresh parsley, chopped
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Season the lamb and beef cubes with salt and pepper, then sear them in batches until browned on all sides. Remove the meat and set aside.

Step 3

In the same pot, add the chopped onion and cook for 4-5 minutes until softened and translucent.

Stir in the minced garlic, sliced carrots, and diced celery, cooking for an additional 2-3 minutes until aromatic.

Add the tomato paste, stirring well to coat the vegetables, and cook for 1-2 minutes.
