Heat the olive oil in a large, deep skillet or a heavy-bottomed pot over medium heat.
Finely chop the onion and garlic. Add them to the skillet and sauté until soft and translucent, about 5 minutes.
Grate or finely chop the fresh tomatoes and add them to the skillet, stirring well to combine.
Mix in the tomato paste and cook for another 2 minutes until the mixture thickens slightly.
Add the Arborio rice to the skillet, stirring to coat the grains with the tomato mixture. Cook for 2 minutes to toast the rice slightly.
Pour in the dry white wine and stir constantly until it is mostly absorbed by the rice.
Gradually add the seafood stock, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. This process should take about 20-25 minutes.
While the rice is cooking, clean and prep your mixed seafood (peel shrimp, scrub mussels, and slice calamari).
About 10 minutes before the rice is fully cooked, add the mixed seafood to the skillet. Stir gently to ensure even cooking.
Season with salt, black pepper, paprika, and lemon juice. Continue stirring as the seafood cooks and the flavors meld together.
Once the rice is tender and creamy, and the seafood is cooked through (mussels should open, shrimp should turn pink, and calamari should be opaque), remove the skillet from the heat.
Sprinkle freshly chopped parsley over the risotto and serve hot. Optionally, garnish with a lemon wedge on the side.
