  • 2 pounds fresh yucca (cassava) root
  • 8 cups water
  • 1 teaspoon salt

  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 1 tablespoon optional: chopped fresh parsley

Directions

Step 1

Peel the yucca root using a vegetable peeler or a sharp knife, removing the brown skin and the pinkish layer beneath until you reach the white flesh. Rinse under cold water.

Cut the yucca into 3-4 inch segments, then halve each segment lengthwise. Remove the fibrous core from the center of each piece.

Slice the yucca halves into fry-like shapes, about 1/4 inch thick.
