Ingredients

  • 250 grams Ground pork
  • 100 grams Shrimp, peeled and deveined
  • 1 tablespoon Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Rice wine or dry sherry
  • 0.25 teaspoon White pepper
  • 2 tablespoons Green onion, finely chopped
  • 40 pieces Wonton wrappers
  • 500 milliliters Vegetable oil for frying
  • 1 unit Egg, lightly beaten
  • 0.25 teaspoon Salt

Directions

Step 1

In a large mixing bowl, combine the ground pork, finely chopped shrimp, soy sauce, oyster sauce, sesame oil, rice wine, white pepper, finely chopped green onion, and salt. Mix thoroughly until the filling is well combined.

Step 2

Place a wonton wrapper on a clean, flat surface. Spoon about 1 teaspoon of the filling onto the center of the wrapper.

Step 3

Brush the edges of the wrapper lightly with the beaten egg using a small brush or your finger.

Step 4

Fold the wrapper in half diagonally to form a triangle. Press the edges together to seal, ensuring there are no air pockets.

Step 5

Bring the two pointed edges of the triangle towards each other, overlapping them slightly, and press to seal with a dab of egg wash.

Step 6

Repeat the process with the remaining wrappers and filling until all the wontons are formed.

Step 7

In a deep pot or large skillet, heat the vegetable oil over medium-high heat to 350°F (175°C). To test, dip a small piece of wonton wrapper into the oil. If it sizzles immediately, the oil is ready.

Step 8

Carefully add several wontons into the hot oil, frying in batches to avoid overcrowding.

Step 9

Fry the wontons for approximately 3-4 minutes, turning occasionally, until they are golden brown and crispy on all sides.

Step 10

Using a slotted spoon, remove the wontons from the oil and drain on a paper towel-lined plate.

Step 11

Repeat the frying process with the remaining wontons.

Step 12

Serve the crispy wontons hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce with a hint of vinegar.
