Ingredients

  • 1 large Sweet potato
  • 1 large Beetroot
  • 1 medium Zucchini
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Paprika
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

Wash and peel the sweet potato and beetroot. Wash the zucchini but do not peel.

Step 3

Using a mandoline slicer or a sharp knife, slice the sweet potato, beetroot, and zucchini into thin, even slices. Aim for about 1/8-inch thickness to ensure even cooking.

Step 4

In a large mixing bowl, combine the vegetable slices with olive oil, salt, paprika, and black pepper. Toss until the slices are evenly coated.

Step 5

Arrange the slices on the prepared baking sheets in a single layer, making sure they do not overlap. Overlapping will prevent them from crisping properly.

Step 6

Bake in the preheated oven for 10-15 minutes. Carefully flip the chips over and rotate the baking sheets for even cooking.

Step 7

Continue baking for another 8-10 minutes, watching closely to prevent burning. The chips should be golden and crispy around the edges.

Step 8

Remove the chips from the oven and let them cool on the baking sheets for 5 minutes. They will become crisper as they cool.

Step 9

Serve immediately for maximum crispiness or store in an airtight container at room temperature for up to 2 days.
