Ingredients

  • 0.5 cup Popcorn kernels
  • 2 tablespoons Vegetable oil
  • 0.5 cup Unsalted butter
  • 1 cup Brown sugar
  • 0.25 cup Light corn syrup
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Baking soda
  • 0.25 teaspoon Salt

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat. Add the popcorn kernels, cover the pot, and shake gently. Cook until the popping slows down to one pop every 2-3 seconds, then remove from heat.

Step 2

Transfer the popped popcorn to a large mixing bowl and remove any unpopped kernels.

Step 3

Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper. Set aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and salt. Bring the mixture to a boil, stirring constantly, then let it boil for 4-5 minutes without stirring.

Step 5

Remove the caramel mixture from heat and stir in the vanilla extract and baking soda. The mixture will bubble up slightly—this is normal.

Step 6

Quickly pour the caramel over the popcorn, tossing until the popcorn is evenly coated.

Step 7

Spread the coated popcorn onto the prepared baking sheet in an even layer.

Step 8

Bake the popcorn in the preheated oven for 45 minutes, stirring every 15 minutes to ensure it crisps evenly.

Step 9

Remove the popcorn from the oven and let it cool completely. Once cooled, break it into clusters and serve or store in an airtight container.
