  • 100 grams panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Preheat the oven to 190°C (375°F).

Bring a large pot of water to a boil and blanch the spinach for 1-2 minutes until just wilted. Drain and rinse under cold water. Squeeze out excess moisture and roughly chop the spinach.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
