Ingredients

  • 4 pieces large flour tortillas
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup cooked white rice
  • 1 cup black beans
  • 0.5 cup sour cream
  • 0.5 cup salsa
  • 2 tbsp olive oil

Directions

Step 1

Heat a large skillet over medium heat and add the ground beef. Cook, breaking it up with a wooden spoon, until browned and fully cooked, about 7-8 minutes.

Step 2

Drain any excess grease from the skillet and stir in the taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes until the seasoning is well combined with the meat. Remove from heat.

Warm the tortillas in the microwave for 20-30 seconds to make them pliable.

Lay each tortilla flat on a clean surface. Spread 2 tablespoons of sour cream in the center of each tortilla.

Add 1/4 cup of cooked rice, 1/4 cup of black beans, and a generous amount of seasoned ground beef on top of the sour cream. Sprinkle with 1/4 cup of shredded cheddar cheese and add 2 tablespoons of salsa.
