Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Sun-dried tomatoes (packed in oil)
  • 1 cup Panko breadcrumbs
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Using a blender or food processor, pulse the sun-dried tomatoes until finely chopped.

Step 3

In a shallow bowl, combine the chopped sun-dried tomatoes, panko breadcrumbs, grated Parmesan cheese, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix well to create the crust mixture.

Step 4

Set up a dredging station with three shallow bowls: one with the flour, one with beaten eggs, and one with the crust mixture.

Step 5

Pat the chicken breasts dry with paper towels to remove excess moisture.

Step 6

Dredge each chicken breast in the flour, shaking off any excess, then dip it into the beaten eggs, and finally press it into the crust mixture to coat it evenly on all sides.

Step 7

Heat olive oil in a large skillet over medium heat. Once hot, sear each chicken breast for 2-3 minutes on each side until golden brown. Work in batches if necessary to avoid overcrowding the pan.

Step 8

Transfer the seared chicken breasts to the prepared baking sheet and place them in the preheated oven.

Step 9

Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 10

Remove the chicken from the oven and let it rest for 5 minutes before serving.

Step 11

Serve with your choice of sides, such as roasted vegetables, mashed potatoes, or a fresh green salad.
