Ingredients

  • 500 g Fresh squid (cleaned, tubes and tentacles)
  • 120 g All-purpose flour
  • 60 g Cornstarch
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Paprika
  • 0.5 tsp Garlic powder
  • 500 ml Vegetable oil (for frying)
  • 3 tbsp Capers (drained and patted dry)
  • 2 tbsp Parsley (chopped)
  • 2 whole Lemon wedges (for serving)

Directions

Step 1

Rinse the cleaned squid under cold water and pat dry with a paper towel. Slice the squid tubes into rings about 1 cm thick, and keep the tentacles whole. Set aside.

Step 2

In a large bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Step 3

Heat the vegetable oil in a deep frying pan or skillet over medium-high heat until it reaches 180°C (350°F). You can test the temperature by dropping a small pinch of flour into the oil; it should sizzle immediately.

Step 4

Lightly coat the squid rings and tentacles in the flour mixture, shaking off excess flour before frying.

Step 5

Carefully drop the floured squid into the hot oil in small batches, ensuring not to overcrowd the pan. Fry for 2–3 minutes until golden and crispy, then transfer to a plate lined with paper towels to drain excess oil.

Step 6

Once all the squid is fried, carefully add the capers to the hot oil and fry for about 30 seconds, or until crispy. Remove and drain on a paper towel.

Step 7

Arrange the crispy squid on a serving platter, scatter the fried capers and chopped parsley on top, and serve immediately with lemon wedges on the side for squeezing over the dish.
