Ingredients

  • 1 Whole chicken (3-4 lbs)
  • 4 cups Kosher salt
  • 4 Egg whites
  • 4 Fresh thyme sprigs
  • 1 Lemon, halved
  • 4 Garlic cloves (crushed)
  • 8 Shallots, peeled
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Freshly ground black pepper
  • 2 tablespoons Butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the whole chicken under cold water and pat it completely dry with paper towels. Remove any giblets if present.

Step 3

Stuff the chicken cavity with the thyme sprigs, both halves of the lemon, and the crushed garlic cloves. Set aside.

Step 4

In a large mixing bowl, combine the kosher salt and egg whites. Mix until the mixture resembles wet sand.

Step 5

On a baking sheet lined with parchment paper, spread a layer of the salt mixture into a rectangle large enough to hold the chicken.

Place the chicken on the salt bed, breast side up. Pack the remaining salt mixture over the top and sides of the chicken, completely encasing it.
