Ingredients

  • 3 cups Crispy rice cereal
  • 0.5 cups Dried cranberries
  • 0.5 cups Dried apricots
  • 2 cups Mini marshmallows
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Prepare a large mixing bowl and lightly grease your hands or a cookie scoop to prevent the mixture from sticking.

Step 2

Chop the dried cranberries and dried apricots into small pieces so they're evenly distributed throughout the balls.

Step 3

In a large saucepan over low heat, melt the unsalted butter. Once melted, add the mini marshmallows and stir continuously until fully melted and smooth.

Step 4

Remove the saucepan from the heat and immediately stir in the honey and vanilla extract until well combined.

Step 5

Quickly pour the melted marshmallow mixture over the crispy rice cereal in the mixing bowl. Add the chopped dried cranberries and apricots, and fold everything together gently but thoroughly using a rubber spatula.

Step 6

Allow the mixture to cool slightly for about 2-3 minutes, but not completely, as it should still be pliable for shaping.

Step 7

Using your greased hands or a cookie scoop, take small portions of the mixture (about 2 tablespoons each) and roll them into firm, evenly sized balls.

Step 8

If desired, roll the formed balls lightly in powdered sugar for a decorative touch and added sweetness.

Step 9

Place the balls on a parchment-lined baking sheet or tray to set for 10-15 minutes.

Step 10

Once set, serve immediately or store in an airtight container at room temperature for up to 3 days.
