Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 0.5 cup chickpea flour
  • 0.5 cup grated carrot
  • 0.25 cup chopped green onions
  • 2 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon paprika

Directions

Step 1

Rinse the quinoa under cold water until the water runs clear to remove the bitter coating.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, cover, reduce the heat to low, and let simmer for 15 minutes or until water is absorbed and quinoa is fluffy.
