  • 4 medium Yukon Gold potatoes
  • 2 large Leeks
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Parmesan cheese (optional)

Directions

Step 1

Wash and peel the potatoes, then cut them into 1/2-inch cubes. Place them in a bowl of cold water to remove excess starch.

Step 2

Trim the leeks, removing the dark green tops and root ends. Slice the leeks lengthwise, then rinse thoroughly to remove any dirt. Slice them thinly into half-moons.

Peel and mince the garlic cloves finely.

Drain the potatoes and pat them dry with a clean kitchen towel.
