Ingredients

  • 2 medium potatoes
  • 4 pieces bread slices
  • 2 tablespoons butter
  • 1 small onion
  • 1 small green chili
  • 1 teaspoon cumin seeds
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 0.5 teaspoon garam masala
  • 1 teaspoon salt
  • 2 tablespoons coriander leaves
  • 1 tablespoon oil

Directions

Step 1

Peel and boil the potatoes in salted water until they are tender. This should take about 12-15 minutes.

Step 2

Drain the potatoes and mash them until smooth. Set aside.

Step 3

Finely chop the onion, green chili, and coriander leaves.

Step 4

Heat 1 tablespoon of oil in a skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds.

Step 5

Add the chopped onion and green chili. Sauté until the onion turns translucent, about 2-3 minutes.

Step 6

Add the turmeric powder, red chili powder, coriander powder, and garam masala. Stir to combine and cook for 1 minute.

Step 7

Add the mashed potatoes to the pan along with salt. Mix well so that the spices are evenly distributed.

Step 8

Cook the potato mixture for 3-4 minutes. Stir in the chopped coriander leaves. Remove from heat and let it cool slightly.

Step 9

Spread 1/2 tablespoon of butter on one side of each bread slice.

Step 10

Divide the potato mixture in half and spread evenly on the non-buttered side of two bread slices.

Step 11

Cover with the remaining two slices, butter side facing up.

Step 12

Heat a skillet or griddle over medium heat. Place the sandwiches on the skillet, butter-side down.

Step 13

Cook each sandwich for 3-4 minutes on each side until the bread is golden brown and crispy.

Step 14

Remove from the pan and cut into halves. Serve hot with chutney or ketchup.
