Ingredients

  • 1 lb Pork tenderloin
  • 2 tbsp Cornstarch
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 1 tsp Garlic powder
  • 3 tbsp Olive oil
  • 4 cups Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 small Cucumber
  • 1 large Carrot
  • 0.5 cup Ranch dressing (or preferred salad dressing)
  • 0.5 cup Croutons (optional for crunch)

Directions

Step 1

Slice the pork tenderloin into thin, bite-sized pieces.

Step 2

In a mixing bowl, combine the cornstarch, salt, pepper, and garlic powder. Toss the pork slices in the mixture until evenly coated.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the coated pork in a single layer. Cook for about 3-4 minutes per side or until the pork is golden brown and crispy on the outside. Work in batches if necessary. Once cooked, set the crispy pork aside on a plate lined with paper towels.

Step 4

While the pork cooks, prepare the salad. Chop the romaine lettuce and place it in a large mixing bowl.

Step 5

Slice the cherry tomatoes in half. Peel and slice the cucumber. Shred the carrot using a box grater or vegetable peeler. Add these to the bowl with the lettuce.

Step 6

Toss the salad with your preferred dressing (such as ranch) until evenly coated.

Step 7

To assemble, divide the salad onto plates or shallow bowls. Top each portion with crispy pork and croutons for added crunch (optional).

Step 8

Serve immediately. For a family-friendly variation, consider serving the pork separately for picky eaters to enjoy on its own.
