Ingredients

  • 3 large Russet potatoes
  • 2 tablespoons Butter
  • 0.25 cup Milk
  • 0.75 cup Grated Parmesan cheese
  • 2 large Eggs
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Vegetable oil (for frying)
  • 2 tablespoons Chopped fresh parsley (optional for garnish)

Directions

Step 1

Peel the russet potatoes and cut them into large chunks.

Step 2

Place the potatoes in a large pot, cover them with cold water, and add a pinch of salt. Bring to a boil over high heat, then reduce the heat to simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 3

Drain the potatoes and transfer them to a large bowl.

Step 4

Mash the potatoes until smooth using a potato masher or ricer.

Step 5

Stir in the butter, milk, and 1/2 cup of Parmesan cheese until well combined.

Step 6

Add the eggs, one at a time, stirring quickly to incorporate. Then mix in the flour, garlic powder, salt, and black pepper.

Step 7

Heat the vegetable oil in a large skillet over medium heat. The oil should be about 1/2 inch deep in the pan.

Step 8

Using two spoons, scoop and shape the potato mixture into small puff-like mounds, about 1 tablespoon each.

Step 9

Carefully place the potato puffs into the hot oil, a few at a time, making sure not to overcrowd the pan.

Step 10

Fry the potato puffs for 2-3 minutes on each side, or until golden and crispy.

Step 11

Remove the puffs from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Step 12

Sprinkle the remaining Parmesan cheese over the crispy puffs while they are still hot.

Step 13

Repeat the frying process until all the mixture is used up.

Step 14

Garnish with fresh parsley, if desired, and serve warm.
