Ingredients

  • 4 pieces (4-6 ounces each) White fish fillets (such as cod, haddock, or tilapia)
  • 1 cup Panko breadcrumbs
  • 0.33 cup Parmesan cheese, grated
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 teaspoon Dried parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 0.5 cup All-purpose flour
  • 1 as needed Olive oil cooking spray

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Pat the fish fillets dry with paper towels, then season both sides lightly with salt and black pepper.

Step 3

Set up a breading station with three shallow bowls. In the first bowl, add the flour. In the second bowl, whisk the eggs until fully combined. In the third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, dried parsley, salt, and black pepper.

Step 4

Dip each fish fillet in the flour, ensuring it’s fully coated, then shake off any excess. Next, dip the fillet into the egg mixture, letting the excess drip off. Finally, press the fillet into the breadcrumb mixture, coating both sides evenly. Place the breaded fish on the prepared baking sheet.

Step 5

Once all the fillets are breaded, spray the tops lightly with olive oil cooking spray to help them crisp up during baking.

Step 6

Bake the fish in the preheated oven for 13-15 minutes, or until the breadcrumb coating is golden brown and the fish flakes easily with a fork. The internal temperature should reach 145°F (63°C).

Step 7

Remove the fish from the oven and let it rest for a minute before serving. Serve with lemon wedges, tartar sauce, or your favorite side dishes. Enjoy!
