Ingredients

  • 150 grams Rolled oats
  • 100 grams Almond flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon powder
  • 0.25 teaspoon Salt
  • 60 milliliters Coconut oil, melted
  • 80 milliliters Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 50 grams Dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, baking powder, cinnamon powder, and salt. Mix well until evenly distributed.

Step 3

In a separate bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, and the egg until fully combined.

Step 4

Pour the wet ingredients into the dry ingredients and mix thoroughly until the dough comes together. If you're using chocolate chips, mix them in at this stage.

Step 5

Scoop out small portions of the dough (about 2 tablespoons each) and roll them into balls. Place them onto the prepared baking sheet, leaving space between each one.

Flatten each ball slightly with your fingers or the back of a spoon to form cookie shapes.
