Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 0.5 cup All-purpose flour
  • 2 Large eggs
  • 2 tablespoons Dijon mustard
  • 1 cup Panko breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 0.5 teaspoon Paprika
  • 3 tablespoons Vegetable oil
  • 2 tablespoons Honey
  • 1 tablespoon Dijon mustard

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.

Step 2

Pound the chicken breasts to an even thickness, about 1/2 inch, to ensure even cooking. Season both sides with salt, black pepper, and garlic powder.

Step 3

Set up a breading station with three shallow dishes. Place the flour in the first dish. In the second dish, beat the eggs and mix in 2 tablespoons of Dijon mustard. In the third dish, combine the panko breadcrumbs, Parmesan cheese, and paprika.

Step 4

Dredge each chicken breast in the flour, shaking off any excess. Then dip it into the egg mixture, ensuring it is fully coated. Finally, press the chicken into the breadcrumb mixture, making sure it is fully coated on both sides.

Step 5

Heat the vegetable oil in a large oven-safe skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts and cook for 2-3 minutes per side, until golden brown.

Step 6

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 7

While the chicken is baking, prepare the honey Dijon glaze by whisking together the honey and 1 tablespoon of Dijon mustard in a small bowl.

Step 8

Remove the chicken from the oven and brush each piece with the honey Dijon glaze. Serve immediately with your favorite sides, such as roasted vegetables or a fresh salad.
